This week we have a brand new addition to our meal plan; Enchiladas. I am hoping that the boys will enjoy making them too. We have recently been adding a bit more variety to our meals from adding paprika to our homemade wedges to adding herbs to our bolognaise sauce. The boys taste pallets seem to finally be getting a bit more adventurous.
We are trying to make our meals a little more “summer friendly” to make it easier to cook if the weather is to get hotter. Mark has been religiously checking the weather app and mentioned earlier that after the thunderstorms we were going to get 30 degree weather again. There is no way we are going to want to be cooking when it will hot. As with all of our meals we don’t stick to regimented days. There is no way in knowing what we are going to want to eat.
This weeks meal plan
Toad in the hole
Chicken and Rice
Spaghetti and Meatballs
Enchiladas
Chicken, Potato Salad
Homemade burgers and chips
Chicken Roast Dinner
Currently I have about 5 weeks left of work before the school holidays and I go on leave. So I am trying to save a bit of money so we can start to go places when lock down starts being lifted. We are currently on tenterhooks about booking a camping trip for July. We really want to go, but there is just so much uncertainty with everything and I am not sure if it would be worth it. If only we had a bigger garden or actual grass and we could pop the tent up in the garden.
Anyways, here is to the week and hopefully better weather too!
As always, we are linking up with Katy Kicker’s meal planning linky (click the image below to be taken to her website)

Great meal plan. It sounds like you have a good mix of meals for all weathers. I planned for hot weather this week and so far it’s been pretty cool x
