Despite actually coming up with last weeks meal plan, admittedly I haven’t stuck to it. With late nights, early mornings and busy days, I just haven’t had the energy. It hit me this week with the amount of food waste we had and it was upsetting. So this week I am trying to get back into it. The plan is to cook every night and make use of the slow cooker. There isn’t much point having one if we choose not to use it. So this is our meal plan, hopefully, you can get some inspiration from it.

Monday

Campfire Stew – I haven’t tried this before but I think it is something the boys will enjoy!

Tuesday

Pulled Pork Rolls and Wedges

Wednesday

Spaghetti Bolognaise – We have always used our own bolognaise sauce, however, it’s just a boring tin of tomatoes. I am going to blitz a bunch of veg this time and really try to bulk it out a bit more. Hopefully, the boys will eat it.

Thursday

Ham, Egg and Chips- Nothing beats a classic!

Friday

BBQ Chicken and Rice – My sister and I recently went for lunch at a local garden centre. We both tried their BBQ Beef and I figured a chicken version wouldn’t be too difficult to do. So I am going to attempt it!

Saturday

Homemade Pizza – The boys love homemade pizza and getting involved with making the bases!

Sunday

and as usual we finish the week with a roast dinner!

    Campfire stew is lovely – I’m sure you’re right and you’ll love it!

    Have a lovely week and I understand completely about the energy as it happens here too sometimes! The key (for us) seems to be keeping dinners easy and doing prep in advance if possible. I know it’s easier said than done sometimes though!

I'm not ready for this, to have all my children in secondary school and no one left in primary. It's been a journey, but boy is he ready for his next adventure!
