Meal Planning Monday – W/c 10th July – The Mum Diaries

There is 8 days left of the summer school term and I for one is really excited! Not only do we have the lazy mornings but I also get to spend more time with my boys. I am not looking forward to planning lunches as well as dinners and the increase cost in our budget. The meals this week are all relatively easy! Last weeks meal plan I stuck to most days with my favourite meal being stir fry.

Monday

Well it was supposed to be school report day today but due to a delay it is tomorrow. So last minute change to Chicken Nuggets and Chips. Shopping is tomorrow and we thought we were going to be having take out.

Tuesday

Due to football and cubs dinner will be sandwiches.

Wednesday

School reports came out yesterday but due to clubs we will have their special dinner tonight. If the school reports are good (they will be!) they get to choose whatever they want. Chances are it will be Chinese, but we will have to see.

Thursday (school friend coming for tea)

Jack’s friend P is coming over for dinner so we are going to have one of our favourite meals. Chicken Dipper wraps with Cucumber, Grated cheese, Pepper, Carrot, and Chips. It’s more a choose your tea so hopefully it will go down well.

Friday

Homemade Pulled Pork – It has been awhile since I made this from scratch so going to cook a batch up and freeze half to have another time. The boys are not keen on the sauce so we will keep some separate.

Saturday

Jacket Potatoes – One of our “why don’t we have this more” meals. Sounds boring but with cheese and beans tastes great!

Sunday

Roast Dinner day!!

      Nothing can beat a good home cooked roast dinner with all the trimmings!
