I love sharing these How to posts. From How to make wax wraps to this week where I am sharing How to make Honeycomb (aka Cinder Toffee) each week it can vary. For my birthday my mum offered to make me a bunch of honeycomb. It tasted great but I was even more surprised with how easy it was to make. So simple she has written the recipe for me to share. Since my birthday she has made it a couple of more times and I have even gone onto coat the honeycomb in chocolate. It tastes amazing and will be a huge hit for those with a sweet tooth.

How to make Honeycomb

It doesn’t take too long to make Honeycomb, however be aware it does get super hot and when you add the bicarbonate Soda it rises quickly. Also, make sure to move anything valuable away from your baking tin, it can ruin any electronics. A lesson my mum learned recently when it spilled over onto her kindle.

Ingredients

  • 500g sugar
  • 200g golden syrup
  • 90ml water
  • 1 tsp vanilla essence
  • 1 tbsp bicarb

How to make

My mum did say those with induction hobs may have issues with making this, I haven’t tested it out on mine though. The saucepan needs to be deep as it rises quickly.

  • Put all ingredients except bicarb in a large heavy base saucepan on high heat until mixture reaches hard crack stage ( dip a knife into the mix then into iced water mix should snap off)
  • Then remove saucepan from heat and quickly whisk in the bicarb.
  • The mix will rise and foam be carefully mix is extremely hot.
  • Pour mix into a large baking tin lined with parchment which needs to be at least 10cm higher than the pan.
  • Allow to cool for at least 30 minutes then break into small pieces and store at room temp.
