Courgette and cheese Muffins

Fresh Courgettes

Arthur, Mark and myself decided after dropping Oliver off at school we were going to go somewhere. We decided to go to a local Pick Your Own farm to pick Sweetcorn and Courgettes.

Whilst we were there we also picked up a recipe to make Courgette and cheese muffins. I like courgettes, particulary roasted however I am the only one who does. We decided to give the recipe a try.

 

Ingredients

300g of grated courgettes

100g of grated mature cheddar cheese

1 large egg

90ml of rapeseed oil

200ml of Natural yogurt

1tsp Baking Powder

8oz of self raising flour

Method

Preheat the oven to 180c

In one bowl mix the cheese, courgette, egg, yogurt and oil.

In another bowl mix the flour and baking powder.

Pour the flour/baking powder mix into the other bowl and stir until its stiff.

Divide the mixture into 12 muffin cases (as you can see we didn’t have muffin cases so used cupcake cases. We also made a lot more than 12!)

The recipe was really easy to follow, completely fool proof.
